A favorite of my British husband, this recipe is a version of the one given to me by my mother-in-law. (This recipe calls for Jello. In the UK, “Jello” is called “Jelly”)
In When Valleys Bloom Again, my heroine, Abby Stapleton, would have enjoyed this delightful dessert. (In England, all dessert after a meal is referred to as “pudding”)
English Trifle (Will Need a Large Deep Dish)
Line bottom of dish with lady fingers or pound cake—I use 2 packages of store bought lady fingers)
Cover this with raspberry or strawberry jam (Optional: soak in sherry)
Make raspberry Jello (Use 1 box. Let it set overnight)
Top jam with layer of Jello (should be thick after being in frig overnight)
Place fresh fruit on Jello (sliced bananas, peaches, strawberries)
Place another layer of lady fingers or pound cake over fruit
Place vanilla pudding over lady fingers (Use 1 box of packaged pudding following directions. Put dish back in the frig to keep chilled)
Then whip heavy cream
Place whipped cream on top of pudding.
Then place more fruit on whipped cream (refrigerate until ready to use)

Pat has published essays, short stories and articles online and in print. She has a keen interest in twentieth-century American and British history, particularly the period of World War II. Pat’s father-in-law served in the British Eighth Army during the war. When Valleys Bloom Again is her debut historical romance set in that era.
